2 cups of leftover fish (or canned mackerel) 1/2 c chopped onions 1/2 c chopped celery 1/2 c corn kernels (canned) 3/4 t. salt 1/8 t. pepper 1/2 c mayo 1T. Dijon mustard 1t. pickle rellish - drain well 1 t. lemon juice 1/2 t. worchestershire sauce 1/4 t. paprika 2 dashes of tabasco 1/2 c crumbs (Crackers or seasoned bread crumbs) Mix above ingredients together 1 egg lightly beaten, fold into mixture along with crumbs make about 8 patties, carefully coat in cracker crumbs, refrigerate for at least an hour brown in pan with 2T butter/margerine, about 3-4 minutes on both sides (depending on thicknes)
