Fish Fit for an Islander

Ingredients

1.5 c. all purpose flour .25 t. baking powder .25 t. salt .25 t. pepper .25 c. shredded sharp cheddar cheese .25 c. sesame seeds .5 c. buter or margerine 2 T. onion flakes 1 lb fish fillets 1 large cucumber, sliced 2 T. dry bread crumbs 2 T. cooking oil TOPPING 1 egg 1 package cream of mushroom soup mix 1 C. sour cream .5 C shredded sharp cheddar cheese

Directions

In large mixer bowl, combine first 7 ingredients. Mix until like coarse crumbs. Press into bottom of 8x12" pan. Sprinkle with 1 tablespoon onion flakes. Arrange fish filets over crust; sprinkle with remaining onion flakes. Layer cucumber slices over fish. sprinkle with bread crumbs. Drizzle with oil. Bake at 400° for 15 minutes. Mix all topping ingredients and spread over dish. Bake 20-25 minutes longer.
