Amberjack filet(s) mayonnaise celery onion boiled egg dill lemon pickles
If you are grilling your amberjack for dinner, grill an extra filet to make a wonderful salad. If you aren't grilling and have a hankering for this salad, just take a filet or two and boil in 1/2 lemon juice and 1/2 water and 1/2 real lemon squeezed and dropped in the pot, cover filet well, boil until fish is done (flaky) don't over cook After the AJ is cooked, flake into a bowl and mix just like you would your favorite tuna salad. For one large filet... I only use real mayo; 2-3 stalks of celery chopped finely; 1/2 large sweet onion, chopped finely; chopped boiled eggs (2-3); I use whole dill pickles cut up, I like lots of pickles - add to taste; couple shakes of dill; 2 tbls sugar (don't use sugar if you use sweet pickles) Mix well and put on fresh rolls! Tuna salad will never be the same. One filet will make alot of hearty sandwiches.
Be creative, the grilled grouper adds a great flavor, I like to use flavored oils when grilling. Oils that you buy for dipping bread are wonderful, just go light as they are strong. I have a wonderful grapeseed oil from Dakota Winery that is citrus and cilantro...SCRUMPTIOUS! You can't go wrong boiling the filets either with some lemon juice. Just don't over cook or it will be dry. (even though it can dryout boiling, I've not had any complaints from the guys)
